How do you cook in a hot air convection oven?
I have recently got a combination microwave but the oven is hot air convection and I don't know whether to cover food as you would in a conventional oven, and do I time it as a fan oven. Any tips would be gratefully received as the booklet just doesn't seem to answer my questions.
You can usually use it just like a regular oven except that things will cook faster. If you are baking bread, or anything that uses yeast to rise, turn off the fan as it will cause severe problems in those instances (works great for yorkshire pudding though). You can cook large joints of meat, uncovered, no problem. They will be juicier and cook faster than in a regular oven. Do not cover meat when you roast it or it will not brown and the taste will suffer immensely. As with any large roast you should baste it a few times to keep the outside moist.
